I made a recipe: banana bread!


Kim’s Banana Bread
2 ripe bananas
10-12 tart cherries + ⅛ c juice
2 eggs

⅛ c Swerve (sugar substitute) brown sugar
¼ c coconut sugar
⅛ c white sugar
⅛ c maple syrup

½ c milk or soymilk + 1 T vinegar to sour/clabber it

½ c very fine almond flour
½ c coconut flour
½ c white wheat flour
1 t baking powder
1 t baking soda
1 t cinnamon

½ c chocolate chips
¼ c chopped pecans

Beat bananas, cherries, and eggs. Add sugars and syrup; beat until creamy. Add sour milk. Whisk together the flours, powder, soda, and cinnamon. Add and mix gently until it becomes batter. Stir in chips and nuts.

Pour/scrape batter into a buttered 8x8” glass pan.

Bake in pre-heated 375°F oven for 30-35 minutes. Test center with toothpick until it comes out clean. Cool on a rack.
